It's called "panzanella" (albeit, an "Americanized" one) not "Big Italian Sub Salad." This makes you sound childishly uncultured. Sometimes you’ll find green pepper in the mix. Oh come on now folks, please stop bastardizing other peoples cultures. Then shred or julienne the carrot, and halve the grape tomatoes. Classic Greek salad is a big pile of tomatoes, cucumber, red onion, and Kalamata olives (no lettuce) with a big block of feta on top. I’ve made this twice to take out on the lake instead of subs and it was fantastic! I used a Tuscan flavored olive oil and received rave reviews by all! Also used a mix of iceberg and butter lettuces. This salad does not have tomatoes and has meat cheese and olives in it. Either way, the creamy dressing has plenty of garlic flavor and coats the pasta, romaine and croutons nicely.

This salad was served at a dear friend's baby shower by a health-conscious friend, who suggested the dressing be prepared with low-fat or fat-free ingredients. I mean I put in onion,grape tomatoes, shredded carrots, celery,tuna and crutons along with the lettuce and dressing.
